Fresh Tomato & Basil Linguine

Ingredients

  • 1/2 lbs. tomatoes, finely chopped
  • 3 cloves garlic, minced
  • 1 red pepper, chopped
  • 1 bunch fresh basil, torn
  • 1/2 c. olive oil
  • 1 t. salt
  • pepper to taste
  • 16-oz. pkg. linguine pasta, cooked
  • Garnish: grated Parmesan cheese

Preparation

Step 1

Stir together tomatoes, garlic, red pepper and basil in a large bowl; drizzle with oil. Sprinkle with salt and pepper; mix well and toss with hot cooked linguine. Sprinkle with Parmesan cheese as desired. Serves 6 to 8.
