BRATS****Beer-Braised Bratwursts with Onion

Ingredients

  • 6 servings
  • 1 teaspoon black or brown mustard seeds or combination
  • 1/2 teaspoon caraway seeds
  • 2 tablespoons unsalted butter
  • 6 uncooked bratwursts (2 lbs.)
  • 2 medium onions, one white, one red, sliced into 1/4-inch-thick half-rings
  • 1/2 tablespoon dark brown sugar
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 cups (12 ounces) brown ale, such as Newcastle
  • 6 hoagie rolls, toasted, Optional, or see recipe for Sausages en Croute with Caramelized Onions and Crispy Gruyere

Preparation

Step 1

*Crush the mustard and caraway seeds in a mortar and pestle and set aside.

*Melt* the butter in a large non-stick frying pan over medium heat until foaming. *Add* the bratwursts and cook, turning occasionally, until browned on all sides, about 10 minutes total. *Remove* to a plate and cover.


*Reduce* the heat to low, add the crushed seed mixture, onions, and brown sugar, and season generously with salt and pepper. *Cook*, stirring occasionally, until the onions have softened and are beginning to brown, about 40 minutes.

*Add* the reserved bratwursts and any accumulated juices, nestling the brats in the onions. *Pour* in the beer and braise the bratwursts, turning once, until they are completely cooked through, about 30 minutes. *Increase* the heat to medium-high and reduce the cooking liquid to a syrupy glaze, rolling the sausages in it to coat evenly.

*Place* a bratwurst in each bun and serve with the onions and mustard on the side.

*Alternately*, use the cooked brats and the onions for Sausages en Croute.
