Ingredients

  • 1/3 cup corn starch
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 cups boiling water
  • 1 lemon (I use 2)
  • 1/2 cup lemon juice
  • 4 eggs
  • 2 Tbs butter

Preparation

Step 1


Combine: put in iron pan and heat 1/3 cup cornstarch,
one cup of sugar
one half teaspoon of salt
Add:
2 cups boiling water (stir until it gets thick)
After thick add to water over moderate heat:
Grated rind of 1 large lemon
1/2 cup lemon juice
4 egg yokes or 3 whole eggs
Mix well
2 Tbsp butter

** Cook the last ingredients until thick and custardy. Add egg yolk after mixing smaller amount of custard into eggs, then add egg mixture to custard and cook until very thick. I like best with four yo using egg whites for meringue.

To make chocolate pie add 1/2 cup 3cocoa, 1 1/2 sugar rather than 1 cup, 2 1/2 cups water rather than 2 and 3 whole eggs.
