Ingredients
- 1 Tbsp olive oil + 2 Tbsp olive oil
- 1 onion, chopped
- 5-6 oz prosciutto, finely chopped
- 1 (9oz) pkg cheese tortellini
- 2 Tbsp balsamic vinegar
- 2 Tbsp Parmesan cheese, grated
Preparation
Step 1
Heat 1 Tbsp olive oil in a large skillet over medium heat. Saute onion and prosciutto until onion is tender and prosciutto is browned. Remove from skillet and drain on paper towel. Set aside. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Return onion/prosciutto mixture to skillet and add cooked tortellini. Toss with 2 tablespoons olive oil and heat through. Place in serving dish or bowl, sprinkle with vinegar and cheese and serve immediately.
