Beef and Barley Stew

Ingredients

  • PAM spray
  • 3-1/2 cups low sodium beef broth
  • 1 can (14.5 oz ea) Hunts diced tomatoes, undrained
  • 1 can (6 oz ea) Hunts tomato paste
  • 1/2 tsp onion salt
  • 1 lb cubed beef stew meat
  • 1 cup sliced carots
  • 1 cup sliced celery
  • 3/4 cup quick cook barley uncooked
  • 1/4 tsp granulated sugar

Preparation

Step 1

Spray inside of 4 qt slow cooker with spray. Combine broth, undrained tomatoes, tomato paste and onion salt in slow cooker. Add stew meat, carrots and celery to slow cooker.
Cover, cook on low 7 hours or high 3-1/2 hours. Stir in barley and sugar; cover and cook on high 30 minutes more until barley is tender.
