Pork With Littlenecks

Ingredients

  • 1 pound pork loin, cut into bite-size pieces
  • 1 1/2 pounds potatoes, cut into cubes
  • 16 littlenecks
  • 1 cup white wine
  • 2 teaspoons hot sauce
  • 6 garlic cloves
  • 1 bay leaf
  • 2 teaspoons paprika
  • 2 tablespoons Crisco shortening
  • salt to taste
  • fresh parsley

Preparation

Step 1

Marinate pork in white wine, hot sauce, garlic, paprika, salt and bay leaf.
Leave overnight or for 1 day.
Drain pork.
In a large skillet over high flame brown pork in Crisco,add littlenecks, heat until littlenecks are open.
Add margarine, bring to a boil.
Add potatoes(which have been fried in a separate skillet).
Sprinkle with fresh parsley.
