Ingredients
- 1 head of cauliflower
- 1/4 tsp salt
- 1/4 cup butter, melted
- 4 tsp lemon juice
- 1 tsp grainy mustard,
- Grated peel from 1 lemon
- 2 tbsp chopped parsley
Preparation
Step 1
Cut cauliflower into florets to make about 6 cups. Cut into 1/2" thick slices; place in shallow 8 cup gratin dish and toss with salt. Roast in 400F oven for 20 minutes.
Mix butter, lemon juice, lemon peel, and mustard, toss with cauliflower. Roast for 10 to 15 minutes longer or until tender and golden. Toss with parsley.
