Ingredients
- 1 1/4 pounds. boneless chicken breasts
- 4 cups water
- 1 med. onion, chopped
- 2 celery ribs, chopped
- 4 garlic cloves, minced
- 1 tbs. olive oil
- 1 can (14.5 oz) Mexican diced tomatoes
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup medium salsa
- 3 medium zucchini, halves & sliced
- 1 med. carrots, sliced
- 1 can white corn
- 1 can (4 oz) chopped green chilies
- 3 tsp. ground cumin
- 2 tsp. chili powder
- 1 tsp. dried basil
- shredded cheddar cheese

Preparation
Step 1
Place chicken in large kettle; add water. Bring to boil; reduce heat. Cover & simmer for 10-15 minutes or until chicken is done. Remove chicken; cut into 1/2" cubes & return to kettle.
In skillet, saute" onion, celery & garlic in oil until tender; add to kettle. Stir in next 11 ingredients. Bring to boil. Reduce heat; cover 7 simmer for 20-25 minutes or until vegetable are tender.
Garnish with cheese. Makes 10 servings. Soup may be frozen for up to 3 months.
