- 2 Tbs. Tomato Basil Garlic Blend seasoning
- 4 boneless, skinless chicken breasts
- 8 cherry tomatoes, cut in quarters
- 4 low fat mozzeralla balls, cut into quarters
- 1 Tbs. olive oil
- 2 tsp. red wine vinegar
Preheat oven to 350. Spray baking tray . Toss tomatoes with 1 Tbs.. of seasoning. Lightly flatten each chicken breast to 1/4 in. thickness. Place tomatoes and four quarters of mozzeralla ball onto each breast. Roll up and secure with toothpick. Place breast on tray. Drizzle with oil, vinegar, and reamining Tbs. of seasoning. Bake for 30 mins. Remove from oven, cover ligthly with foil and let rest for 10 mins.
