Ingredients

  • 1 1/2 cup oil
  • 2 cup sugar
  • 3 eggs
  • 2 1/4 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 2 cups shredded raw carrot (4 large carrots)
  • 2 cups flaked coconut
  • 1 cup chopped walnuts
  • 1 can (8oz) crushed pineapple

Preparation

Step 1

Combine all ingredients in order given, using a wooden spoon.
Bake in a 9x13" pan at 350 degrees for 50min to 1 hour
