Refrigerator Jam

This recipe requires no cooking, no added pectin (beyond what the fruit contains) and has the health benefits of the chia seeds. Super easy to make!

Ingredients

  • 1 1/3 cups strawberries (or other berry of your choice)
  • 2/3 cup rhubarb
  • 2 Tablespoons raw honey
  • 2 Tablespoons chia seeds

Preparation

Step 1

Process all ingredients in food processor or blender until chia seeds broken up. Place in jelly jar in refrigerator overnight.

The chia seeds will "gel" and set up the jam. You can add additional chopped fruit before placing in the frig if you desire chunky jam.
