Ingredients

  • 1/2

    cake or 1 teaspoon dried yeast

  • 1/8

    cup lukewarm sweet cider

  • 2

    tablespoons honey

  • 2

    tablespoons oil

  • 2

    eggs, beaten

  • 1 3/4

    cups mixed whole- grain flours (rye, buck- wheat, corn, oatmeal, wheat)

  • 1/4

    teaspoon salt

  • 1/4

    teaspoon fennel seeds, crushed

  • 1/2

    cup bananas, mashed

Directions

1. Soften yeast in cider. 2. Mix honey, oil and eggs. 3. Add to yeast mixture. 4. Stir in flours, salt and seeds. 5. Set in warm place for 1/2 hour to rise. 6. Blend in bananas. 7. Turn into oiled loaf pan. 8. Let rise for 10 minutes more. 9. Bake at 325° F., about 40 minutes.
