Ingredients
- 2 Tbsp. olive oil
- 2 shallots, minced
- 1 pound ground turkey, preferably 7% fat
- 1/4 cup loosely packed fresh mint leaves, finely chopped
- 1/4 cup loosely packed fresh flat-leaf parsley leaves, finely chopped
- 2 tsp. Dijon mustard, plus more for serving
- Coarse salt and freshly ground pepper
- 4 rustic rolls, for serving
- Boston lettuce, for serving
Preparation
Step 1
Heat 1 Tbsp. oil in a medium saute pan over medium. Cook shallots, stirring, until soft and translucent, about 2 minutes. Remove from heat; let cool slightly.
In a large bowl, gently but thoroughly mix turkey, shallots, mint, parsley, and mustard. Season with 1 tsp. salt and 1/4 tsp. pepper. Gently form mixture into four equal size patties (about 4 inches in diameter).
Heat remaining tablespoon oil in a large saute pan over medium. Add patties, and cook until brown underneath, about 4 minutes. Turn, and continue cooking until other side is brown and center is no longer pink, about 4 minutes more. Transfer to plates; serve immediately with rolls, lettuce, and mustard.
