Ingredients

  • 2 pounds sweet potatoes roasted or boiled
  • 3 eggs
  • 1 cup heavy cream
  • Pinch of grated nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 cup pecan pieces
  • 1 cup (packed) light brown sugar
  • 2 Tablespoons Pure Cane Syrup
  • Pinch of salt
  • 1/4 teaspoon pure vanilla extract
  • 2 Tablespoons Bourbon
  • 1/2 Cup flour
  • 1/2 Cup flaked coconut
  • 1/2 stick (4 Tbls.) butter SOFTENED

Preparation

Step 1

Preheat oven to 350 degrees
Cook potatoes, then mash in a mixing bowl until smooth
Stir in eggs and cream.
Add nutmeg, cinnamon, (1/2 CUP of the pecans), (1/2 cup of the brown sugar), syrup, salt, vanilla and bourbon.
MIX WELL
Pour mixture in a 1 1/2 quart GREASED baking dish
Combine remaining 1/2 cup pecans, 1/2 cup brown sugar, flour coconut and butter. with your hands mix ingredients until mixture resembles a coarse texture. Spread mixture over sweet potato and place in oven.
Bake 45 minutes until set
