Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (16 oz.) tomatoes, diced
  • 1 garlic clove, minced
  • 1 tsp oregano leaves, crushed
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 lb lasagna noodles
  • 2 eggs, beaten
  • 1 can (8oz.) tomato sauce
  • 1 can (6 oz) tomato paste
  • 2 cups cottage cheese
  • 1 lb mozzarella cheese, shredded

Preparation

Step 1

Cook onion and ground beef together until onion is clear. Drain meat. Add tomatoes, sauces, salt, pepper and oregano. Simmer for 30 minutes, uncovered. Cook noodles to package directions. Mix eggs and cottage cheese. In a 9x13 pan, layer with 1/3 of meat sauce, ½ of noodles, ½ of mozzarella and ½ of cottage cheese mixture. Repeat and top with remaining meat sauce, Bake uncovered 30 minutes at 375°. Let sit for 15 minutes before serving.
