Pasta with Asiago Cheese & Spinach

Ingredients

  • 3 cups boiling water
  • 4 ounces sun-dried tomatoes (2 cups) not in oil
  • 2 tablespoons extra virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cloves garlic, crushed
  • 12 ounces uncooked cavatappi pasta
  • 1 10-ounce bag fresh spinach, torn
  • 3/4 cup finely grated Asiago cheese
  • 1/2 cup finely grated Parmesan cheese

Preparation

Step 1

Combine boiling water and sun-dried tomatoes in a bowl. Let stand for 30 minutes. Drain and chop.

Sauté spinach in garlic until just wilted.

Combine tomatoes, oil, salt and pepper in a large bowl. Add pasta and spinach. Toss gently.

Sprinkle with cheeses. Toss gently.
