Ingredients

  • 2 Tablespoons EVOO
  • 2 leeks, white and light green parts only chopped (1-1/2 cups
  • 5 ears shucked corn from cobs
  • 1 cup coarsely chopped peeled potato
  • 4 cups chicken stock
  • 1 Tablespoon fresh lemon juice
  • 1/4 cup creme fraiche
  • Chopped Chives

Preparation

Step 1

Heat oil and add leeks till they soften. Add corn kernels, potatoes and stock, Season with salt and pepper. Bring to a boil and cook about 35 minutes.

Discard cobs and let cook and put i a blender till smooth and strain discarding solids. Top with creme fraiche and chives once cooled.
