Ingredients

  • 3/4 c. all-purpose flour
  • 1 1/4 c. cornmeal
  • 1/4 c. baking powder
  • 2 eggs
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 c. green bell peppers, chopped
  • 1/2 c. fresh or frozen corn kernels
  • 1 jalapeno pepper minced, discarding the seeds and ribs
  • 1/2 c. minced onions
  • 1 c. buttermilk
  • Oil for cooking

Preparation

Step 1

1) In a large bowl, mix the flour, cornmeal, baking powder, sugar and salt
2) In a separate bowl, mix the egg, onion, peppers, corn and buttermilk
3) Add the liquid to the dry and stir to combine
4) Refrigerate 45 minutes to an hour before using

Heat the oil to 325 F

5) Drop teaspoonfuls of batter into the oil and cook until golden brown, about 3 minutes. Remove from the oil and drain on a cooling rack
