Ingredients
- 3/4 cup all purpose flour
- 1 cup white sugar
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 cup 100% pure pumpkin
- 3 eggs
- 1 tsp lemon juice
- 2 Tbsp confectioners sugar
- FILLING
- 1 8oz package cream cheese
- 1/4 cup butter
- 1 tsp vanilla
- 1 cup confectioners sugar

Preparation
Step 1
Preheat oven to 375 degrees and grease and flour 9 x 13 jelly roll pan.
Mix together: flour, sugar, baking soda, pumpkin pie spice.
Stir in pumpkin puree, eggs and lemon juice.
Pour mixture into prepared pan, spread evenly.
Bake 375 for 15 minutes
Place damp linen towel on counter and sprinkle with confectioners sugar and turn cake onto towel. Carefully, roll up with cake inside. Place cake in towel roll on cooling rack for 20 minutes.
Make filling. When cake cool, unroll and spread icing and re-roll (no towel)
Wrap in plastic wrap and keep in refrigerator
