Ingredients
- 4 chicken breasts
- extra virgin olive oil
- salt & pepper
- 1/2 C mango - peach jam
- 2 T soy sauce
- 1 t lime juice
- 1 t peeled, grated ginger
- 1/2 small jalapeño, seeded & minced
- rice
Preparation
Step 1
Brush chicken with olive oil & season with salt & pepper. Grill until golden brown on both sides. While cooking chicken , add the mango peach jam, soy sauce, lime juice, ginger & jalapeño in sauce pan. Simmer to make a glaze. Brush the glaze over chicken for last minute of cooking. Remove to cutting board & glaze with sauce again then slice into strips. Serve over rice.
