Ingredients
- SEASONING SAUCE
- 3/4 c water
- 1 Tbsp cornstarch
- 1 Tbsp catsup
- 1 Tbsp soy sauce
- 1/4 c sugar
- 1/4 c wine vinegar
- a few drops of liquid hot pepper seasoning
- COATING
- 2 egg yolks
- 4 tsp water
- 2 Tbsp flour, all purpose
- 2 Tbsp cornstarch
- MEAT
- 1 lb boneless pork, cut into 1" cubes
- 1 clove garlic, minced
- 1 13-oz can pineapple tidbits, drained
Preparation
Step 1
SEASONING SAUCE--Prepare & set aside
Mix water & cornstarch until smooth; stir in remaining ingredients.
COATING
Beat egg yolks with water.
Blend in flour & cornstarch until smooth.
MEAT
Add cubes of pork to coating mix & coat meat well. Drain off excess.
Pour oil into wok to a depth of about 1-1/2 inches and heat to 340.
Add meat & fry, stirring occasionally, until golden brown (10-12 minutes). Remove with a slotted spoon, drain and keep warm.
Remove all but 2 Tbsp of the oil from the wok & set heat to medium high. When oil is hot, add garlic & stir until lightly browned.
Add pineapple, seasoning sauce & meat. Stir until mixture boils & thickens (about 1 minute).
Serve over hot cooked rice.
