  • For crepes:
  • 2 cups flour
  • 2 cups water
  • 2 eggs
  • Salt
  • For Filling:
  • 1 small container ricotta cheese
  • 1 egg
  • 8 oz shredded mozzarella
  • salt & pepper to taste
  • parsley

Preparation

Step 1

Mix all crepe ingredients together. Spray 8" non-stick pan (I prefer stainless steel) and pour 1/4 cup of batter and roll around pan. Allow to cook on first side, then flip to cook on second side. (Cooking time for each crepe is about 3 minutes total). Remove crepe from pan an place aside. Spray pan again with cooking spray, and repeat steps for remaining batter.

Mix all ingredients together for filling mixture. Roll about 2 TB of filling mixture into each crepe and roll. Bake in a pan using sauce layered on top with mozzarella cheese, if desired.
