Vanilla Cream Pie

Ingredients

  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/4 tsp. salt
  • 2 cups milk
  • 3 slightly beaten egg yolks
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • 1 9" baked pie crust
  • Meringue
  • 4 egg whites
  • 3/4 tsp. vanilla
  • 1/2 tsp. cream of tartar
  • 1/2 cup sugar

Preparation

Step 1

In a saucepan, combine sugar, flour, and salt; gradually stir in milk. Cook and stir over low to medium heat till bubbly - cook two minutes. (Stir constantly.) Gradually stir a small amount of hot mixture into egg yolk. Slowly add this mixture to saucepan. Cook two additional minutes. Remove from heat and add butter and vanilla. Pour into cooled pie crust. For meringue: Add vanilla and cream of tartar to egg whites and beat until soft peaks form. Gradually add sugar and beat until stiff glossy peaks form and sugar is dissolved. Put crust on pie filling, sealing all edges. Bake at 350 for 12- 15 minutes.

For Chocolate Pie: Increase sugar to 1 cup. In a small bowl, mix 6 tbsp. cocoa and 2 tbsp. cooking oil. Add to milk mixture.

For Coconut Pie: Add l cup flaked coconut to vanilla mixture. Sprinkle meringue with 1/3 cup coconut before baking.

For Butterscotch Pie: Substitute brown sugar for granulated sugar. Increase butter to 3 tbsp.
