Step 1
Line a baking sheet with parchment paper. Then stir 2 envelopes/2 tbsp unflavored genatin into 1/3 c water. THen put 1/2 c sugar in 1/3 c water and 2 tsp light corn syrup over medium heat. Bring to a boil, stirring and cook until sugar dissolves and temp reaches 240 degrees. Carefully pour sugar mixture into genatin mixutre, stirring constantly. Let sit 4 minutes. Then us an electric mixer and whip 1 1/2 egg whites until soft peaks form. With mixer on medium low speed, pour sugar-gelatin mixture into egg whites in slow steady stream. COntinue to whip until stiff peaks form. Pour mixture into 8x8 baking pan or dish and refigerate unitl siffened, about 3 hours. Turn it out onto a surface and sprinkle with powdered sugar and peel off parchment. Cut into cubes and serve.
