  • 1 box @pillsbury sugar free cinnamon swirl quick bread mix
  • 15 oz can pumpkin puree
  • 2 eggs
  • 1/4 cup water

Heat oven to 350 degrees. Coat muffin tin with nonstick cooking spray. In a small bowl, beat the eggs and water. Add egg mixture and pumpkin to quick bread mix (large clear packet in the mix) in a large bowl. Beat by hand or with electric mixer for 1 minute. Scoop 1 tablespoon of mixture into each of 18 muffin cups. Sprinkle about 1 teaspoon swirl mix (small clear packet) on batter in each muffin cup. Cover swirl mix with another tablespoon of batter and smooth down to cover swirl mix. Sprinkle each muffin cup with remaining swirl mix. Bake according to box directions (18-21 minutes). .
I love the cinnamon surprise in the middle!
