Homemade Croutons

Dear Readers: Here's a simple way to make delicious homemade croutons anytime you want them.

To get started:

Cut day-old (or older) bread into small cubes.

Mix your favorite herbs and spices with about 1/4 cup of olive oil, then lightly brush the oil on all sides of the bread cubes.

To saute them, put them in a pan over medium heat for about five minutes, tossing frequently. They're done when they look toasted and golden brown.

To bake them, spread the coated bread cubes on a baking sheet and bake in a 300 F oven until they're crisp and dry - about 45 minutes.

They'll keep for about a week in an airtight container on the shelf or up to six months in the freezer.
