Ingredients

  • 4 eggs, separated
  • 4 TB sugar
  • 500 gm mascarpone cheese
  • 1 pint heavy cream
  • 1 cup espresso coffee (sweeten to taste)
  • 3 TB amaretto (or another sweet liquor)
  • 500 gm lady fingers

Preparation

Step 1

Prepare espresso and allow to cool.

Mix 4 egg yolks with 4 TB sugar until smooth in a large bowl.

In another small bowl, beat 4 egg white until very fluffy.

Add mascarpone cheese to egg yolks and sugar mixture and mix until combined. Then add heavy cream and mix. Then add egg white and mix all until smooth. This is your cream.

Using a long pan (9x13), put cream on bottom to cover. DIp lady fingers in coffee mixture and layer across. Pour cream mixture (1/2) of what is prepared) and layer again with dipped lady fingers and another layer of cream mixture (remaining mixture). Sprinkle top with sifted cocoa powder or grated chocolate.

Refrigerate at least 3 hours before serving, however overnight is best.
