Ingredients
- Topping:
- 1 1/2 cup flour
- 1 cup rolled oats
- 1 cup brown sugar,packed
- 1/2 cup sugar
- 1 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1/2 cup shortening
- 1 cup apple juice or water
- 2 eggs
- 2 tbsp dark molasses
- 1/2 cup butter or margarine,melted
- 2/3 cup brown sugar,packed
- 1/2 cup flaked coconut
- 1/2 cup golden raisins, chopped
- 1/2 cup chopped pecans
- 3 tbsp light cream or milk
Preparation
Step 1
1. Preheat oven to 350F. Measure all ingredients, except topping ingredients into a large bowl. Beat 3 mins. Pour into a greased and floured 9x13" baking pan. Bake 35-40 mins, or until a cake tester inserted in center comes out clean. Cool slightly.
2. To make topping, mix together all ingredients. Spread topping on cake. Broil several minutes, about 3" from the source of heat, until topping is golden. Serve when completely cool; Or just place all the ingredients in a saucepan and bring to a boil over medium heat and boil until sugar is dissolved and pour evenly over warm cake.
