Chicken Croquettes

Ingredients

  • 1 cup thick white sauce
  • 2 cups ground chicken
  • 1 tbsp minced onion
  • 1 tsp parsley
  • dash salt
  • dash pepper
  • 1 egg
  • 3/4 cup dry bread crumbs
  • 2 tbsp water

Preparation

Step 1

Mix white sauce; chicken onion, and parsley. Add salt and pepper. Spread mixture in ungreased square pan, 8x8x2. Cover & chill 2-3 hours. Divide into 12 parts, shape into balls. Beat egg and water until blended. Dip each ball into egg mixture then roll in bread crumbs until completely coated. Cover and chill at least 2 hours. Fry in hot fat for 1 1/2 - 2 min or until lightly brown. Drain.
