Ingredients

  • Leftover Chicken Carcass from a Roasted or Slow Cooked Chicken
  • 1 onion... or leave in the left over onion that it was cooked with.
  • 1 rib of celery; if you have one... if not don't worry about it.
  • 1 carrot; or leave in the left over carrot that it was cooked with.
  • 1 bay leaf; if you have it... if not don't worry about it.
  • A little fresh thyme and/or parsley if you have it... if not don't worry about it.
  • Salt to taste...

Step 1

After stripping the chicken of the meat you want to use for leftovers; put the carcass and everything else in the slow cooker. Add anything else that you want from the above ingredients and cover the carcass with water. Leave at least 1/2 inch of space at the top of the slow cooker.
Cook on low for 8 to 10 hours.
Let it cool a little (not all the way), remove the large pieces by hand and then ladle it out into a bowl that you've set a fine screen over so that it catches all the small bones and other solids.
Refrigerate what you will use within a week and freeze the rest in the quantities you normally use it. I usually use a variety of 1 or 2 cup containers.
This stock is great for making soups, rice, stuffing or risotto and is a lot healthier than what you buy at the store.
