*** Poppy Seed Salad Dressings - Two kinds

This dressing was served over fresh spinach salad with Mandarin oranges and sliced mushrooms for “Rendezvous at Ralston”, a fundraiser for the grammar school. One woman liked it so much, she drank the dressing all by itself! My Mom’s is also awesome -- see below. Serve with Goat Cheese and Pear Salad.

Ingredients
- 1/3 c. honey
- 1 tsp. salt
- 2 tbsp. white wine vinegar
- 1 tbsp. Dijon mustard
- 3/4 c. salad oil
- 1 tbsp. fine chopped onion
- 1-2 tbsp. poppy seeds
Preparation
Step 1

In a small bowl, combine the honey, salt, vinegar and mustard.

Gradually add the oil, whisking thoroughly until the mixture is very well blended. Stir in the onion and poppy seeds.

Shake well before tossing with the salad.

1 tbsp. poppy seeds

Combine all ingredients and blend well.
