Rolls: Carol's Traditional Roll Dough

Ingredients

  • 3 + cups flour (1 cup kamut & 2+ cups white)
  • 1/3 cup sugar
  • 1/4 cup shortening or butter, softened
  • 1 tsp salt
  • 3 tsp. yeast
  • 1/2 cup warm water
  • 1/2 cup warm milk
  • 1 egg

Preparation

Step 1

Mix warm milk and water with yeast and sugar, until yeast foams. Add egg and butter. Add 2 cups flour and salt. Knead until smooth (about 5 mins in stand mixer with dough hook) add more flour if needed. Dough should clear sides but stick to bottom of bowl. Cover and let rise until double.

Divide dough into 2.0-2.2 oz. portions (approx 15-16 rolls). Roll into ball. Place in greased pan, cover and let rise until double.

Preheat oven to 350°F.

Bake until golden about 20 mins.
