Mandarin Spring Salad (U.D.)

Ingredients

  • 1/4 cup sliced almonds
  • 1 tbsp. and 1 tsp. sugar
  • 1 box spring mix
  • 2 medium celery stalks
  • 1 11oz can mandarin
  • 2 tbsp. green onion (thinly sliced)
  • SWEET-SOUR DRESSING
  • 1/4 cup vegetable oil
  • 2 tbsp. sugar
  • 2 tbsp. white vinegar
  • 1 tbsp. chopped parsley
  • 1/2 tsp. salt
  • dash pepper
  • dash red pepper sauce

Preparation

Step 1

Cook almonds and sugar in 1 quart saucepan over low heat, stirring constantly, until sugar is melted; cook and break apart.

Prepare sweet-sour dressing. Combine all ingredients and shake in a tightly covered container. Refrigerate until ready to serve.

Toss almonds, dressing and remaining ingredients.
