Ingredients
- Shrimp and Pasta Salad

- 1/3 cup red wine vinegar
- 1 teaspoon dried basil
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
- 1 cup uncooked rice shaped pasta
- 2 cups tomato -- diced and seeded
- 1 cup frozen peas -- thawed
- 1/2 cup purple onion -- finely chopped
- 1/4 cup parsley -- chopped
- 1 pound medium shrimp ** -- cooked and peeled
- Boston lettuce -- optional
- Combine first 6 ingredients in a large bowl. Stir well, set aside.
- Cook pasta omitting salt and fat, drain well.
- Add pasta and remaining ingredients to vinegar mixture and toss well. Cover and chill.
