Shrimp and Pasta Salad

Ingredients

  • 1/3 cup red wine vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 cup uncooked rice shaped pasta
  • 2 cups tomato -- diced and seeded
  • 1 cup frozen peas -- thawed
  • 1/2 cup purple onion -- finely chopped
  • 1/4 cup parsley -- chopped
  • 1 pound medium shrimp ** -- cooked and peeled
  • Boston lettuce -- optional
  • Combine first 6 ingredients in a large bowl. Stir well, set aside.
  • Cook pasta omitting salt and fat, drain well.
  • Add pasta and remaining ingredients to vinegar mixture and toss well. Cover and chill.
