Ingredients

  • 4

    cups fresh tomatoes, chopped

  • ½

    cup onion, chopped

  • ¼

    cup green pepper, chopped

  • ½

    jalapeno, seeded and finely chopped (optional)

  • ½

    tsp extra virgin olive oil

  • ½

    tsp apple cider vinegar

  • ½

    ground cumin

  • 1

    tsp unrefined sea salt

  • 2

    clove garlic, finely minced

  • Juice from ½ of a fresh lime

  • 3-4

    sprigs of cilantro

Directions

1.Put all ingredients into food processor. 2.Pulse until desired consistency. 3.Let stand on the counter for at least 1 hour before serving or storing. 4.Serve at room temperature. 5.Store in a tightly covered container in the refrigerator.
