Ingredients

  • 3 cups loosely packed mixed fresh herbs, minced (parsley thyme, mint
  • & chives)
  • 1/2 cup light brown sugar
  • 1/4 cup Dijon mustard
  • 1 tablespoon kosher salt
  • 2 teaspoons ground black pepper
  • two 3 to 3 1/2 lbs whole sides of salmon w/or without skin
  • 2 lemons, thinly sliced

Preparation

Step 1

Heat the oven to 450 degrees. Line a baking sheet with parchment paper.
Prepare the seasoning blend: In a medium bowl, combine the herbs, sugar, mustard, salt and pepper; set aside
Coat and roast the fish: Place the salmon on the prepared baking sheet, skin side down (if it has skin). Spread the herb mixture evenly over each piece of salmon. Top the salmon with lemon slices.
Bake for about 15 to 20 minutes, or until the salmon is just opaque at the center.
Use the parchment paper to help transfer the sides of salmon to a serving platter.
(I buy the salmon at Costco (it is farm raised, but good) Hard to find the whole sides. 20 minutes is long enough – will be done and moist.)

Serves 12 to 14 (one whole filet will serve 8+)
