Roasted Prime Rib

The roast MUST be at room temperature for several hours before roasting. 6 or more hours is preferred. You have tohave accurate oven temp here. Calculate the poundage of your roast by 5 minutes. Using the example of a 5.75 pound rib roast with 2 ribs. This will feed 4 adults.

  • Butter at room temperature
  • Herbs de Provence
  • Fresh cracked pepper
  • Kosher salt-a generous amount

Step 1

Step 1 multiply roast poundage X 5 minutes. Round up plus add 1 minute for heat lost when opening the oven door.
2.Preheat oven to 500 degrees F
3. Put roast, rib side down in roasting pan
4. Mix the pepper and herbs in the butter until well combined.
5. Spread the butter mixture over the entire surface of the prime rib. The more the better.
5. Put the kosher salt over the entire surface of the butter. Be very GENEROUS.
6. Put the roast in the 500 degree oven for the amount of time calculated (8 lb. roast X 5 minutes = 40 minutes plus 1 minute for door opening.)
7. Turn off oven and leave for 2 hours. DO NOT OPEN THE DOOR.
8. After 2 hours, remove the roast and LET SIT at least 15 min to allow it to rest before carving.
This will be rare to medium rare.
