Grilled Greek Veggies

Vary the veggies to your liking or what you find at the farmers market. Other options include eggplant and turnips.

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 medium zucchini or summer squash, sliced
  • 2-4 Tbls. olive oil
  • 1-2 tsp. Penzeys Greek seasoning

Preparation

Step 1

In a large bowl, combine the veggies. Drizzle with olive oil and season with Greek seasoning. Start with smaller amount of oil, and increase as desired. Mix thoroughly to coat veggies. Grill in a basket over medium heat, turning once, until slightly browned, about 5 mins per side.
