Ingredients
- 2 lbs fresh yellow squash washed, cut in 1" pieces
- 2 medium onions, diced
- 1/2 - 3/4 stick butter
- 10-12 salted crackers
- 1 medium egg
- Salt
Preparation
Step 1
Boil squash and onions in salted water for 20 minutes or til soft
Drain and chop squash and onions to a finer texture.
Add butter and stir til melted
Crumble crackers and add to mixture.
Taste, add salt if necessary.
When seasoned, add slightly beaten egg.
Bake 40 minutes then add additional cracker crumbs on top.
Dot with butter and bake 5-10 minutes.
Note: This casserole may be frozen, uncooked, without cracker topping.
Bake at 400 degrees for 40 minutes.
