Raisin-Filled Cookies

My grandma did so many special things. She always served hot chocolate to us grandchildren along with these delicious cookes.

Ingredients
- Raisin Filling:
- 1 c. shortening
- 1 c. sugar
- 1 c. brown sugar, packed
- 3 eggs, beaten
- 4 c. all-purpose flour
- 1 tsp baking soda
- 1/2 tsp slat
- 1 t. vanilla extract
- 1 c. raisins, finely chopped
- 1/2 c. water
- 1 Tbsp sugar
- 1 Tbsp all-purpose flour
Preparation
Step 1
Mix together all ingredients until well combined. Roll out on a lightly floured surface to 1/4" thick. Cut out with a 2" round cookie cutter. Spread Raisin Filling onto half the cookies. Arrange remaining cookies over filling; press edges with a fork dipped in flour to seal. Place on greased baking sheets. Bake at 350 degrees for 9-10 minutes.
Raisin Filling:
Mix together all ingredients in a saucepan over medium heat. Bring to a boil. Remove from ehat; cool slightly.
