Slow-Cooker Pumpkin Oatmeal
Easy to make the night before,this seasonal take on oatmeal keeps you going all morning long.Steel-cut oats have a nutty,firm texture;they take a long time to prepere so they'ar perfect for use in a slow coker.
- 6 cups water
- 3 cups raw pumpkin,cut into 1 inch cups
- 1 1/2 cups steel-cut oats(Power Food)
- 1/2 cup honey
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
Put all ingredients in a 3- to 6 guart
slow cooker;stir well.Cover and cook on
low for 8 hours;stir well before serving.Yields about 1 cup per serving
Swap butternut squash for the pumpkin,if desired.
