oz semi-sweet chocolate
cups heavy cream
1. Place chocolate in a stainless steel bowl. 2. Place bowl over a pot of simmering water. 3. Stir with rubber spatula and allow chocolate to melt, almost completely. 4. Remove from the heat and continue to stir until cholocate completely melted. 5. Cool slightly. 6. Place all the eggs in a bowl for the mixer. 7. Warm eggs over the pot of simmering water, stirring with your whisk so that eggs will not scramble. 8. Add sugar to the eggs. 9. Place bowl on the kitchen aid mixer and beat eggs and sugar to ribbon. 10. Fold in chocolate. 11. Whip cream, using the kitchen aid mixer, to a soft peak. 12. Fold the whipped cream - a little at a time - gradually into the egg mixture. 113. Chill overnight.
