VEGGIE BROWN RICE

  • 2 CUPS WATER
  • 1 CUP UNCOOKED BROWN RICE
  • 1/2 TSP DRIED BASIL
  • 2 CARROTS CUT INTO 1 INCH STRIPS
  • 1 CUP CHOPPED ONION
  • 9 GREEN ONIONS CUT INTO 1 INCH STRIPS
  • 1/2 CUP RAISINS
  • 2 TBSP OLIVE OIL
  • 1 PKG FROZEN PEAS THAWED
  • 1 TSP SALT
  • 1 CUP PECAN HALVES TOASTED

Preparation

Step 1

COOK BROWN RICE WITH BASIL. STIR FRY CARROTS, ONION, GREEN ONIONS, AND RAISINS FOR 5-7 MINUTES. THEN ADD PEAS. COOL ONE MINUTE LONGER. STIR IN PECANS AND RICE TO HEAT.
