Zucchini relish w/ Jalapeno

Ingredients

  • 1 teaspoon mustard seed
  • 1 3/4 cup sugar
  • 2 tablespoons salt
  • 2 unseeded chopped jalapenos
  • 1 cup apple cider vinegar
  • 2 teaspoon celery seed
  • 1/2 cup chopped sweet red peppers
  • 1 cup chopped onions
  • 2 cups chopped zucchnni
  • 1/2 cup chopped green peppers

Preparation

Step 1

Combine zucchini, onions, sweet red peppers, green peppers and salt and cover with cold water. Let set for 2 hours. Then drain and squeeze out as much liquid as possible and set aside. In a large sauce pot combine the remaining ingredients and bring to a boil. Add the veggies and simmer for 10 minutes. Shut off heat and put in hot jars and process in boiling water for 10 minutes. Remove from hot water and let cool and seal. Makes 2 pints or 4 --1/2 pints
