Ingredients

  • Crust

  • 1

    cup almond flour

  • 1

    Tablespoon trivia

  • 1

    egg

  • 1/8

    cup water

  • 1/3

    cup butter

  • Lemon

  • 4

    eggs

  • 4

    egg yolks

  • 1/2

    cup lemon juice

  • 3/4

    cup truvia

  • 1/2

    teaspoon lemon extract

  • 4

    Tablespoon butter

  • Meringue

  • 4

    egg whites

  • 1/2

    teaspoon cream of tartar

  • 3/4

    cup powdered xylitol

Directions

Crust: Mix together and press in bottom of a 11x9 pan and bake for 15 minutes at 350 degree. Lemon: In a sauce pan whisk together ingredients and bring to a boil over low heat. When thickened, put on top of baked crust. Meringue Beat the 4 egg whites with cream of tartar. When stiff add powdered xylitol and stir in gently. Put on top of filling and put back in oven at 400 degrees until nice and brown.
