Ingredients

  • 14oz can diced tomatoes, undrained
  • 1 1/2 cups vegetable stock
  • 1 cup dried green lentils
  • 3/4 cup yellow onion
  • 5 tbsp tomato paste
  • 1/2 large red bell pepper, seeded and chopped
  • 1 tbsp minced garlic
  • 1 tbsp apple cider vinegar
  • 2 tsp dried parsley
  • 1 tbsp chili powder
  • 1 1/2 tsp oregano
  • 1 1/2 tsp paprika
  • 1 tsp sea salt
  • 1/4 tsp cayenne pepper
  • pepper to taste

Preparation

Step 1

combine the tomatoes, stock, lentils, tomato paste, bell pepper, garlic, diced onion and vinegar in a slow cooker

stir in the seasonings

cover and cook on low for 7-8 hours or on high for 3-4 hours

If too much liquid remains, remove the lid and cook on high for an additional 30-50 min.

Serve on buns or eat alone.
