Baked Potato Cauliflower - Low Carb

Ingredients

  • 2 1⁄2 cup cauliflower, cooked
  • 1 cup sour cream, low fat is ok
  • 3 ⁄4 cup cheddar cheese, shredded (full-fat works best)
  • 3 scallion, finely chopped
  • 3 slice (up to 6) bacon, cooked and crumbled
  • 1 salt
  • 1 pepper

Preparation

Step 1


1.Preheat oven to 350 degrees F (175 degrees C).
2.Chop cooked cauliflower into very small pieces.
3.In medium bowl, mix sour cream, 1/2 of the scallions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste.
4.Stir in the cauliflower.
5.Place in medium baking dish and sprinkle remaining cheese and bacon on top.
6.Bake for 20 minutes.
7.Sprinkle the remaining scallions on top just before serving.
