Ingredients

    olive oil

  • 1/4

    C lime juice

  • 3

    T minced shallots

  • 1

    T fish sauce

  • 1 3/4

    t sugar

  • 2

    minced jalapenos

  • Kosher salt & pepper

  • 2

    T minced ginger

  • 1 1/2

    T soy sauce

  • 1 1/4

    lb long slender Asian eggplants, trimmed & sliced lengthwise

  • 4

    oz. baby lettuces (@ 5 C)

    0z halved cherry or grape tomatoes

  • 1

    C packed basil leaves

  • 1/3

    C packed mint leaves

Directions

Prepare grill, med hi In small bowl, whisk 3 T oil with lime juice,2 T shallots, fish sauce, 3/4 t sugar & jalapenos. Season with salt & pepper. In another small bowl, combine 2 t water with ginger, soy sauce, remaining shallot & 1 t sugar. Arrange eggplant halves on rimmed baking sheet, brush both sides with oil & sprinkle with salt & pepper. Grill eggplant til tender 3-5 min per side. Combine lettuce, tomatoes, basil & mint in large bowl. Rewhisk lime dressing & toss to coat. Season with salt & pepper. Transfer to salad platter & arrange eggplant on top. Spoon ginger mixture over eggplant & serve.
