Ingredients

  • Medium White Sauce:

  • 2

    T. butter, melted over low heat

  • 1

    c. milk

  • 2

    T. flour

  • ¼

    t. salt

  • Thin White Sauce:

  • 1

    T. butter

  • 1

    T. flour

  • 1

    c. milk

  • (Used for cream soups)

  • Thick White Sauce:

  • 3

    T. butter

  • 3

    T. flour

  • 1

    c. milk

  • (Used for Souffle)

  • Heavy Sauce:

  • 4

    T. butter

  • 4

    T. flour

  • 1

    c. milk

  • (Used as binder for Croquettes)

Directions

1. Blend 2 T. flour into the melted butter. 2. Add salt. 3. Cook over low heat for 5 minutes. (Cooking this long will minimize the "flour" taste,. 4. Slowly add 1 c. milk, stirring constantly. 5. Continue cooking slowly until smooth and thickened.
