  • 2 T. flour
  • 1/4 t. salt
  • Thin White Sauce:
  • 1 T. butter
  • 1 T. flour
  • 1 c. milk

  • Thick White Sauce:
  • 3 T. butter
  • 3 T. flour
  • 1 c. milk
  • (Used for Souffle)
  • Heavy Sauce:
  • 4 T. butter
  • 4 T. flour
  • 1 c. milk
  • (Used as binder for Croquettes)

Step 1

1. Blend 2 T. flour into the melted butter.

2. Add salt.

3. Cook over low heat for 5 minutes. (Cooking this long will minimize the "flour" taste,.
