Ingredients
- Medium White Sauce:
- 2 T. butter, melted over low heat
- 1 c. milk
- 2 T. flour
- 1/4 t. salt
- Thin White Sauce:
- 1 T. butter
- 1 T. flour
- 1 c. milk
- (Used for cream soups)
- Thick White Sauce:
- 3 T. butter
- 3 T. flour
- 1 c. milk
- (Used for Souffle)
- Heavy Sauce:
- 4 T. butter
- 4 T. flour
- 1 c. milk
- (Used as binder for Croquettes)

Preparation
Step 1
1. Blend 2 T. flour into the melted butter.
2. Add salt.
3. Cook over low heat for 5 minutes. (Cooking this long will minimize the "flour" taste,.
4. Slowly add 1 c. milk, stirring constantly.
5. Continue cooking slowly until smooth and thickened.
