Spaghetti Carbonara

Ingredients

  • 1 lb thin spaghetti
  • 8 slices bacon cut into 1 inch strips
  • 1/4 cup olive oil
  • 1 medium yellow onion (chopped)
  • 4 tablespoons butter cut into pieces
  • 1/2 cup chicken broth
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs (room temperature) lightly beaten
  • 1/4 cup chopped parsley
  • 1 cup grated parmesan cheese

Preparation

Step 1

Cook spaghetti. Meanwhile cook bacon in 12 inch skillet until crisp. Remove bacon and drain grease. Wipe skillet with paper towel. Heat oil in skillet over moderate heat, add onion, and cook 5 minutes until soft. Add butter, broth, salt, pepper, and heat through for 2 minutes (DON'T BOIL). Remove from heat. Drain pasta, toss with sauce in skillet. Add eggs and continue tossing for 1 minute. Add parsley then cheese, and crumble bacon on top.
